1)In a medium saucepan, combine peach nectar and apricots; cook over medium-high heat for 6 to 8 minutes or until the consistency of light syrup, stirring constantly. Remove from heat; cool.
2)In a food processor bowl with metal blade attachment, process butter until light and fluffy. Add cooled apricot mixture, pistachios, salt and pepper; mix well. Cover; refrigerate until needed.
Use as a flavoring for sauteed vegetables or as an addition to pancakes or French toast.
